Sunday Scrolls: June 5th

We started this month off with a few family challenges. I can’t wait to tell you about them in Scrolls today (except the one I’m already trying to back out of 😅); but first – it’s a super easy snack recipe, a shift in perspective for the summer, and I scoured each end of the internet for our favorite finds of the week just for you. We’re so happy you stopped by today!

Making.

NO-BAKE OATMEAL PEANUT BUTTER CUPS (GF + V!)
  • 1 1/2 cups of GF oats (we buy this brand and LOVE them! plus, they’re sprouted, and organic, so you don’t have to worry about glyphosate)
  • 1/4 cup ground flax (great for additional fiber, protein, antioxidants and omegas)
  • 1 1/4 cup nut or seed butter (a little runny is great)
  • 1/4 cup maple syrup
  • 1 cup melted chocolate (HU is everything to me! vegan, and refined sugar-free, plus amazing taste)
  • optional 1/2 cup of your favorite add-ins. You can do additional chocolate chips, or raisins, nuts, whatever you like!)
Oatmeal Peanut Butter Cups

Mix together oats, flax, peanut butter, maple syrup and *half cup melted chocolate*. Form into “cups” in your greased muffin tin. Place a divot in the center of each cup, and fill with the remaining chocolate. Sprinkle each cup with sea salt and pop in the freezer to harden. Store in the fridge until you’re ready to enjoy!

Reading.

I love checking the local authors section at the library, and My Summer Darlings was a feature in this week’s display. The librarian hinted that she thought it was about our town, and after reading, I sure as heck hope not 😅. It was a light, quick read, but not one you’ll want to go out of your way to find. This one was pretty surface level, lacking depth and character development; and in that vein, no one was particularly likable. It skewed woman vs. woman, and the author didn’t give us anyone to root for.

You know when you’ve been present (but not involved in) an uncomfortable, gossipy conversation, and you leave with that ick feeling? I felt that way about this summer thriller. Not terrible, but not my favorite. Next Sunday I already have a far better one to share with you!

Watching.

Netflix just released new episodes of My Next Guest featuring conversations with Billie Eilish, Kevin Durant, Ryan Reynolds, Julia Louis-Dreyfus, Will Smith (filmed pre-scandal) and Cardi B. So far, we’ve watched Ryan Reynolds (they covered interesting family dynamics I hadn’t read about him before), and Julia Louis-Dreyfus. If you’re a fan of hers at all – that episode would be the one I’d recommend. What a talented, wonderfully interesting human she is!

Listening.

Dr. Joe Dispenza can be a bit polarizing, but a few of his nuggets have stuck with me this week. Especially in regards to the scientifically proven ways that gratitude can change your life, and the impact our thoughts have not only on our mental health, but our physical health as well.

I referenced a few family challenges we've taken on this summer and the first one (that Grey made up himself), I love. For every book he reads between now and the school year starting, he earns $1 (his goal is 100 books, but since we're already pushing 30, I know we're looking closer to 200 big ones out of pocket 😆). I had no idea he would take it as seriously as he is, and it is *incredible* to watch not only how excited he is about reading, but his dedication as well. 

And the second challenge is a race at the end of September. I promised Grey I would run it with him, but I must have forgotten 1) my knee surgery, where the surgeon said "you'll never run again". And 2) the fact that it is 100 degrees in Texas. I would very much like to back out only two training sessions in, but that is an impossibility with Coach Jon following us around the neighborhood driving the golf cart blasting the Rocky theme song. ((I am dead serious 😳😆🤩))
