We have tried several attempts to come up with the perfect s’more cookie and I think we finally landed on this iteration. These vegan, gluten-free s’more cookies capture all the nostalgic magic of roasting marshmallows around a crackling fire – but without any of the dietary restrictions holding you back. In less than twenty minutes, you’re going to have in hand a perfectly chewy cookie base studded with rich chocolate chunks, and topped with golden, gooey marshmallow that gets beautifully caramelized in the oven. The best part? This recipe is surprisingly simple to make, using wholesome ingredients that everyone can enjoy.
ingredients
- 1/2 cup vegan butter (slightly melted)
- 1/3 cup vegan yogurt (we used cocoyo and it is outstanding!)
- 1/2 cup date sugar
- 1 t. vanilla
- 1/2 t. baking soda
- 1/2 t. salt
- 1 1/2 cups GF flour
- 1 c. vegan chocolate chips
- 1/2 cup crushed GF graham crackers
- 1/2 cup chopped dandies vegan marshmallows
one bowl wonder

- Cream together your butter, yogurt, sugar and vanilla for 1-2 minutes.
- Add in your dry ingredients – waiting on the chocolate chips, crushed grahams, and marshmallows until the end.
- Once you’ve formed your cookies on the sheet, take your finger (or the back of a spoon) and create a little indent at the top to add another marshmallow or two.

bake
Bake at 350 degrees for 12 minutes. You’ll see the marshmallows turn a gorgeous golden hue, and the bottoms will crisp slightly. Let them cool for about 10 minutes and ENJOY!
