Would you consider yourself to be spontaneous? I absolutely identify more as a planner…at least until last week. On Wednesday night I said to Jon, what if we get Grey out of school early on Friday and drive to Charleston for a long weekend? And then my type-A (amazing) mega-planner of a husband said, why not?! It was everything we didn’t even know we needed (even the 18 hours each way with Gemma in tow). What a gift to spend that time together taking in a new-to-us part of the country. The ocean! The fresh air! The palm trees! I want to be spontaneous more often. In the meantime, come in for a homemade ice cream bar, a fitness trend I love, and beautiful inspo you’ll want to screenshot and save:
Meals
High Protein Ice Cream Bars
- 1 can of coconut milk
- 1/2 cup peanut butter (I used NutZo)
- 1 t. vanilla
- 1 t. cinnamon
- 1/4 cup maple syrup
- 1/4 cup protein powder (I used chocolate Truvani – vegan)
- 1 cup favorite chocolate chips
- 1 t. coconut oil or EVOO
Blend all of the ingredients (except the chocolate chips and EVOO) in your blender until silky. Ready your candy bar mold, then melt half of your chocolate chips and oil. When smooth, pour a small amount in the bottom of each rectangle. I brushed up the chocolate on to the sides, but you don’t need to do that, you can absolutely just have it on the bottom and top. Pop the molds in the freezer for a few minutes until the chocolate hardens. Then pour in your ice cream on top of the hardened chocolate, and back to the freezer for at least two hours (or until solid). Once solid, melt the remainder of your chocolate chips, and pour on top. Here’s your chance to add any additional toppings (like sea salt or crushed nuts) on top. Back to the freezer and VOILA!, the most scrumptious, healthy, high-protein ice cream bars!
Movement
I deleted TikTok a while back because it felt like a major time-suck, but I do miss seeing whichever trend has swept the app. According to this article, the latest is “Soft Hiking” (appreciating your surroundings and moving your body in a slow, purposeful way to truly absorb and appreciate the experience). I love the concept! Especially of leaning in to whatever interests you have, and whatever ways movement feels good to you.
Mindset
The first one I think about all the time! My mind is like a hamster wheel some days that just keeps circling back until I force it to think a new thought. And if you’re in the mood for more gems, I sent this to my Oprah-Stan best gal this week and my goodness there are some golden nuggets. My favorite of all 18? “Create the highest, grandest vision possible for your life, because you become what you believe.”
