Sunday Scrolls: July edition

This edition of Scrolls was an absolute delight to put together. I loved layering in some of our favorite treats to come out of the kitchen lately (homemade mint chip ice cream!), along with ways to super-power our dog walks, and all of the golden nuggets that are inspiring us in new ways. I hope we leave you feeling motivated and full of all things well + joyful today. But first, come on in!

Let’s start with our Summer Grocery List in case you’re in a food rut like we were and need some fresh ideas 🌱

A family favorite – our easy and delicious Anti-Inflammatory Iron Powerhouse Smoothie!

plus our mint chocolate chip ice cream (vegan, healthy and scrumptious!):

  • 1 can of coconut milk + 1 can of coconut cream
  • 1 cup frozen spinach
  • 1 avocado
  • 1/4 cup fresh mint leaves
  • 1-2 t. peppermint (2 if you aren’t using the fresh mint, or if you love a strong minty flavor!)
  • 1 t. vanilla
  • 1/2 t. salt
  • 2/3 c. monk fruit “sugar”
  • 3/4 cup HU vegan chocolate chips or date chips (a mix of both is superb!)

My mom surprised Grey with an ice cream maker and we have tried so many fun concoctions (with this one as a clear winner so far). Served up beautifully in his Great Grandma’s vintage dish!

Add everything but the chocolate chips to your ice cream maker, or blend on high in your blender for 3-4 minutes. The avocado is a miracle worker in making this ice cream super smooth, and it takes out the green flavor from the spinach so all we’re left with are the nutrients and that gorgeous hue! Grab your spatula and put in a freezer-safe dish, then be sure to take it out 20 minutes or so before you hope to enjoy it. Delicious!

Today’s movement focus is the bee’s knees. Did you know 25% of people over the age of 50 report experiencing chronic knee pain? Our knees take on 1.5x of our body weight in pressure, which compounds over the hundreds of thousands of steps we take every year.

Here are two exercises we can start today for stronger knees so we don’t fall into that 25%. Plus, I’m already one knee surgery in and I never want another! How about you, how are your knees feeling lately?

  • Walking backward has an immediate impact on the health of our knees and research shows it helps prevent, manage, and even improve disease. Even one 15-minute reverse walk per week has major benefits!
  • Tib raises not only strengthen the front muscle of the shin to prevent knee injuries, it also improves balance and coordination.

And last month I shared Jon’s Father’s Day gift, which he loved so much, he insisted I try one, too (this is the style I got, in blue). Once you get past the feeling of walking around like a member of the SWAT team, it really makes for an incredible workout/ walk/ bonus energy during housework!
