Sunday Scrolls: February edition

You might be able to tell how long January actually felt, and how much I’ve missed Scrolling with you based on the overflowing bits & bobs about to envelop you in a warm squeeze inside. Starting with the ridiculously easy and delicious focaccia recipe (that I’m making again tonight!), a 1000/10 book recommendation, habit helpers, favorite finds, growth mindset moves to bring into February, and so much more:

Meals

This homemade, less than an hour, spectacularly scrumptious focaccia cannot be hyped enough. It is absolutely outstanding and you can doctor it up however you like based on what you’re serving her with:

  • 2 1/2 cups gluten free flour (I used the Jovial brand because I find it is the cleanest and most digestible, plus it’s packed with protein!)
  • 2 t. baking powder
  • 1 1/2 cups warm water
  • 1 packet rapid rise yeast
  • 1 T. honey (or agave)
  • 1 T. sea salt
  • 2 T. olive oil
  • Whisk your yeast into the warm water, then add honey and wait until it gets foamy on top (10 min).
  • Combine all dry ingredients while you wait for the yeast combo to bloom, then add the wet + dry to a large bowl, plus your 2 T. of olive oil. Don’t overmix, and bonus: you don’t need to knead it!
  • Cover with a towel in a warm spot and let it rise for 30 minutes.
  • Preheat the oven to 400 degrees. After your dough has sat for 30 minutes, finger-poke a few spots on top like the picture above, then drizzle a little extra EVOO on top along with any other toppings and seasonings you might like.
  • Bake for 30 minutes (or until the top is a deep, gorgeous, golden hue!

Fun food fact of the month: if you eat berries regularly, you have a 21% lower risk of all-cause mortality! And that number jumps to 31% if you consume blueberries regularly.

I really want to try this hummus alternative – it looks gorgeous and is loaded with nutrients!

Movement

Grey just had a belt test in Taekwondo and Jon won himself Dad of the year only one month into 2024 by learning every single routine, kick, and combo so he could go over it with him 9,768 times before the testing ceremony. One of the more rewarding parts of parenting – seeing your tiny human work hard for something they want to achieve – and your bigger human helping them make it happen. I was reminded several times over that modeling is the best way to teach; their eyes are always taking in what we eat, how we move, how we deal with tough situations. Our mission for February – find an activity to enjoy with someone you love and bonus points if you’re both learning something new!

I need to be more mindful of weaving this practice into my daily habits. Especially since I was carrying a 5 gallon jug of paint and it was tough!
