Superfood Sweet Potato Soup – V + GF

Are you looking for a warm, nourishing, bowl full of flavor tonight for dinner? Same. This luscious Sweet Potato Bisque is going to knock your socks off – and wait until you read how many health benefits are packed into this baby:

Sweet potatoes are such a scrumptious superfood! They’re high in fiber and antioxidants (which protect your body from free radical damage) and promote a healthy gut and brain. They’re also incredibly rich in beta carotene, which converts to vitamin A to support great vision and your immune system.

Another plus – the beta-carotene in sweet potatoes has been shown to fight inflammation, and eating them regularly can help ease joint pain and other symptoms of inflammatory conditions like arthritis. Woo!!

This bisque was pretty basic to whip up, but the flavor is anything but. It’s luxe, layered, and positively lovely.

Here’s what you need:

  • 3 medium sweet potatoes, and 3 large carrots roasted (I kept the skins on for extra vitamins)
  • 1 yellow onion, chopped
  • 1 T. chopped garlic
  • spice powders: onion, garlic, ginger, red pepper flakes, celtic salt and ground pepper
  • vegetable stock
  • one can of coconut cream or coconut milk
  • 1/4 cup almond butter (fun tip I heard from @LovingItVegan)
  1. Start by roasting your sweet potatoes and carrots in the oven at 400 degrees for 30 minutes.
  2. Chop a medium sized onion and sauté it in your pot in a (generous) coating of EVOO. Add a tablespoon more than you normally would because this helps give it a silky texture, and olive oil is outstanding for you!
  3. When the potatoes and carrots come out of the oven, plop them right into the pot with your onions.
  4. Sprinkle in your spices, stirring to incorporate after each flavor.
  5. Now we’ll add in the vegetable stock and can of coconut milk. Start by adding half of the carton of stock, then the full can of coconut. Stir and lower heat. Keep the vegetable stock close by to thin it out later on if need be.
  6. Now we’ll add in the almond butter – woo does that make the flavors sing!
  7. After 20-30 minutes, use an immersion blender to blend well, or remove from heat and add to your smoothie blender.
  8. Back on the stove, check to see if the texture is what you’re after. I like mine a little more on the thick side, but you’ll know what you prefer when you stir it. Add in a little more stock if you want it thinner.
  9. Now we reduce to a simmer and we’re almost ready to eat!
  10. Once you dole out your helping, I love to top it with a drizzle of olive oil, a sprinkle of sea salt, and a smattering of micro greens for color!
