We are officially in final countdown mode – moving in less than two weeks! When our offer was accepted on the new house and it started to feel real, we made a “leaving list” of all the wonderful things we wanted to do before saying goodbye to the midwest. This weekend we checked off our favorite donut shop, Grey’s first haircut in over a year, and today we’re hiking the Indiana Dunes National Park! I feel so thankful for this time in our life and all of the memories we’re making together. It was also a fabulous week filled with fun finds we know you’ll love. Here they are ??:

Ever since we went apple picking, this has been my go-to lunch each day. I love this Apple Nacho recipe from the Veganista – but you can do any variation you like! I have so much fun switching it up each day. I start by drizzling organic PB powder from Costco mixed with coconut milk, add lots of cinnamon, then switch it up with granola some days, toasted pecans other days, and am always looking for other ideas so I don’t get sick of it. This tastes like a treat, has a super satisfying crunch, and you know what they say about apples.

The Chef Show on Netflix just released new episodes and you have to watch The Milk Bar Bake Sale. See those spectacular cakes?! She teaches us how to make them. The best part? Awesome baking tips for what they dub “home cooks”. I was doing the butter/ egg mixing technique all wrong! PS – I found the Birthday Cake recipe for you; should we try it together?!

In the spirit of the change in seasons, and new beginnings ahead, I was so excited to read this book I had heard many times over was a real game-changer. Her approach to lack and the way our minds are programmed to see our day, our lives and everything in it from a perspective of lack rather than abundance helped to force a major shift inside me. Twist gives practical advice and plants the seeds for major transformation. I hope it will do the same for you!
Feel It.
I’m not spending as much time on the ‘gram as I used to, but every now and again I’ll stumble across a nugget worth saving, and I get so excited to share it with you. I do I am affirmations every morning when I put on my sunscreen and get ready for the day. If you haven’t tried it, I highly recommend. If I were to finish the last sentence and add to the list, mine would be: I AM GRATEFUL TODAY – for my heart beating, my lungs breathing, my eyes seeing all of the beauty all around me. What would yours be??

Jon is swiftly turning me into a sneaker-head. When Grey was born, he started this tradition of buying us matching sneakers and this is his latest surprise. (They are SO comfy and have a little lift for an extra pop!).
Eating less gluten has been great for my gut health, but harder to execute in a delicious fashion. This was helpful!
