Sunday Scrolls: October 17th

We’re just starting to feel those cozy season vibes here in Texas and I can’t wait to share some with you today on Scrolls! This edition has a healthy brownie recipe for you to try (so easy and Grey-approved!), my favorite book of the year, and a bunch of fun finds from a truly delicious week! Making.

BLACK BEAN BROWNIES

I want to start by saying, I know. They don’t look as delectable and aesthetically pleasing as traditional brownies. But Grey went back for *thirds* so trust me when I tell you, they taste amazing.

They’re also incredible for digestion, protecting your eyes, and regulating blood sugar. Plus, I’m betting you have every one of these ingredients in your pantry!

🥣Start by making 2 flax eggs (each “egg” is 1 T. ground flax plus 3 T. water)
Add the flax mixture to your food processor along with:
⚫️1 can of black beans, rinsed well and drained
🫒2 T. EVOO (or your preferred oil)
🍁1/3 cup maple syrup
🕊1 t. vanilla
💪🏼1/2 cup @drinkorgain vegan simple chocolate protein
🧂1 t. cinnamon and a few shakes of sea salt
👩‍🍳1 1/2 t. Baking powder

💿Zhuzsh for a minute, scrape down the sides, and give it another 30 seconds or so. 

🍫Spray your baking dish (I used an 8×8 pan), and spoon your brownie batter in. It should feel dense and fudgy, not runny. So much so I sprayed a piece of parchment paper and used it to pat it down into the pan.

🪵Bake at 350 for 20 minutes, let cool, then top how you like! 

🧁I’m trying to cut excess sugar so they tasted sweet enough for me (without spiking my blood sugar 🙌🏽) and I ate them as-is. But you can have fun with the toppings – maybe chopped nuts, frosting, peanut butter. Let me know if you try!

Reading.

Absolutely outstanding 9.4⭐️. I had heard so many fantastic recommendations for The Silent Patient, but hadn’t had the opportunity to read it until this week. I started and finished it before bed one night because it was an impossibility to put down. This isn’t one of those novels that takes a while to get into. Nor is it the kind of novel with so many characters it’s hard to keep track of. The twists, shocking 😳 turns, and absolutely phenomenal storytelling made it my favorite read of the year. If you’ve been waiting for your next murder mystery, this is it.

Watching.

A few weeks back we shared our (albeit a little late to the game) love for Schitt$ Creek. Jon and I are in the sixth and final season now and I am so sad for it to end. If you’re a fan of the show – I implore you to watch this farewell documentary. I cried several times, learned so many interesting nuggets on how the series was created, and my love grew even more for what the show means to people all over the globe. They truly captured a culture of kindness, community, and inclusivity. PS – I will miss the Moira accent…and wigs, the most!

Listening.

I know Dr. Phil can be polarizing. I never had the opportunity to watch his show, but I did stumble onto his podcast a few years ago and he has had some incredibly thought-provoking topics on personal growth that have resonated with me, including the expert he showcased this week – Dan Ariely, the Professor of Psychology and Behavioral Economics at Duke University. He shared some interesting research & actionable tips to better set ourselves up for success.

These fall/winter boots are gorgeous in person and come in several colors. I love the pebble grey and cedarwood!

The first things homebuyers notice when they tour houses for sale. #2 surprised me!

After touring so many homes through the years, I *know* they look in drawers. Organized drawers always impress 👏🏽 – how great are these for your ziplock stash?!

If you have a little kid in your life, 10/10 recommend these designer dupe sneakers. $17 and they look so great in person. They do run big so I would size down a whole size.
