How are you today? This is such a strange time where you can be enveloped in your little family bubble feeling deep joy, then jolt back to reality in the next moment and remember we’re still in a global pandemic. I pray that for today you stay in your bubble; laugh, and eat well, feel gratitude and full health. My hope for Sunday Scrolls is that it’s a small slice of your day that gives you that feeling. I sure am glad you’re here with us. Grey is teaching us how to make homemade pizza dough and we have too many feel-good nuggets to list:
Make It.
If you’ve been following for a bit, you know how much we love Pizza Night in casa de #NixonPack. Last year’s family Christmas gift was this pizza oven, and I’ll admit, I started out quite the skeptic thinking we’d use it once or twice. Man am I eating crow pizza ?. We have it at least once a week and have finally perfected homemade dough. We’re walking you through it today, and we promise, it’s super easy – you have all of the ingredients in your pantry:
- 1 packet of yeast
- 1 cup warm (not hot!) water
- 1 T. sugar
- 1 T. olive oil
- 1 t. salt
- 2 cups of flour
- Start by opening your yeast packet into a medium sized bowl. Then slowly pour in 1 cup of warm water. I say warm leaning hot but not hot to the touch. Too hot and your yeast won’t get the job done.
- Then add 1 tablespoon of sugar and give it a gentle mix. Let that sit for 5 minutes until it starts getting a little foamy, bubbly-like.
- Next add in your olive oil and salt, then start adding in your flour. You won’t screw this up so the measurements of the flour don’t need to be exact. You’re aiming for 2 total cups but it may be a little more, or a smidge less.
- Mix that well(ish), then start kneading with your hands. Form it into a ball and let it sit until you’re ready to use it! We usually wait at least 30 minutes, but sometimes I make it the morning of and just leave it to rise throughout the day. To be honest, it tastes the same either way. Bake as you would in the oven, or try it on the grill and report back please!

We didn’t get through this in one sitting (a rarity in our house), but that’s not because it wasn’t cute. I liked the updated version of a silly holiday rom-com, and although some spots were a little out there, it was overall good for a few laughs and a great one to zone out to after a long week! 7.8/10⭐️

David’s Refuge (a phenomenal non-profit in CNY) sent me the sweetest idea this week. It was a greeting card with an envelope, and they encouraged me to write a note and send it to a caregiver in my life. I’ve been reading about all of the benefits of collagen for years, but being vegan, I just couldn’t swing slugging down animal bones ?. I started this vegan alternative a few weeks ago and already notice a difference in my hair and nails; plus it’s supposed to be good for joint health, eliminating age spots, better skin, and the list goes on. Bonus: it tastes like lemonade!!
