Happy Memorial Day weekend to you! It’s pretty spectacular when you think about all of the things we get to do in a day because people were brave enough to care about the future of their nation, and all of the people in it. We’re soaking it in this weekend and filling it with joy jolts, family, and deep gratitude for our service men and women. Today’s Scrolls has a bunch of fresh, delicious recipes, a creepy new show (but you can’t stop watching!), and some summertime favorites. Thank you for being with us today!

Nixon Pack’s Pea Pesto Powerhouse ??. This is our favorite pesto recipe to sneak in a ton of health that’s masked in beautiful, fresh flavors ?. It keeps you full for so long, packs a punch with protein, fiber, and nutrients (and is great for digestion)! Save this post when you’re in a lunch rut and need a reminder:

  • 1 cup frozen organic peas (mostly thawed)
  • 1 cup of basil ?
  • 1 cup spinach ?
  • 1/2 cup EVOO
  • Juice of 1 1/2 ? (save the last half to squeeze on top at the end)
  • 1/3 cup nutritional yeast
  • 1/3 cup pepitas (pumpkin seeds)
  • 2 t. Garlic (we used scapes from the market today ?)
  • all your favorite seasonings: we use red pepper flakes, s&p, garlic salt & a hint of ginger.
  • I served it on a fresh loaf of sourdough that I warmed in the oven. Then I sprinkled hemp hearts, and few more shakes of ?, and gave one more drizzle of EVOO & ?. Enjoy!!

Prepare to be disturbed. This one came up as a 97% match (don’t you love when Netflix knows) and since we were in the market for a new series, we took the bait. We’re only on episode three, and sometimes it feels hard to get through because of the content ?, but I need to know what happens to these people!

I am bananas for this dress. Love the sustainability factor & the fact that they plant a tree with every purchase!

Jon surprised me with these sneakers and I have to say, they are my favorite pair of all time. An immediate joy-jolt!

Must-watch shows coming in June. Which one are you adding to your list?

I am all for this organization/ cleaning hack. Especially for remembering to re-stock!

These compatibility checks are always funny to me. Sometimes spot-on, sometimes far-off. In our case, it was the latter (at least that’s what I’m going with after 15 years of marriage ?). What about you?

This week was pretty packed for the Pack – Grey had his pre-K graduation from the Spanish Schoolhouse, we are working on the next big idea for our family (and cannot wait to share it with you!), and are trying to squeeze in every summertime joy jolt before kindergarten begins the first week in August!
