Sunday Scrolls: May 16th

I can’t wait to share Scrolls with you today. It has been such fun to put together – a scrumptious no-bake S’more cup (which also happens to be vegan and gluten-free!), a plethora of joy jolts in the links at the bottom, and a beautifully written book that is well worth adding to your reading list. Oooh and a juicy new whodunit series I know you will love! Happy Sunday, friend!

Make It.

These were the biggest hit in our household in quite some time. And speaking from experience, one tastes like s’more if you ask me…((had to)) ?. It’s hard to find gluten-free + dairy-free treats so I’ve had fun testing ideas with Grey in the kitchen whipping up some after-school snacks. Okay, fine. I ate most of these myself! But it’s always a good sign when our resident carnivore and gluten-eater goes for seconds and gives it his seal of approval (thanks Jon ?). 

S’more Cups

Here’s how easy they are: 

?‍?2 cups gluten free oats
?1/4 cup sugar (or any alt sweetener you like) 
?1/4 t. salt
?8 t. coconut oil (melted)

Blend all of those ingredients together. Form the crust in a greased muffin tin (we used a larger tin). Pop in the freezer for five minutes. Then:

?mix together 1 cup of any kind of dairy-free yogurt with 1 cup of gluten free brownie mix to make your filling. It tastes like the most delicious chocolate pudding ?.

? grab the muffin tin out of the freezer, and spoon pudding mixture into each cup. Top with crushed GF graham crackers + @mydandiesmarshmallows! ENJOY!!

It’s hard when you start a new book and you’re still thinking about the book you read last week. But thankfully, this is in a whole other ball field and is such a fantastic use of your time. Sidebar: I’ve been giving that a lot of thought lately. How we spend our time, and what is worthy of it. If I’m not invested in the characters, or if the story is not enriching my life in some way, I gift it to a friend who might enjoy it more, or return it to the library earlier than planned. But this one is a keeper! The author teases you in a way. Only letting out the details on a need-to-know basis. I’m not sure I’ve ever had the privilege of reading that writing style before and it feels like such a journey! One in which he makes you feel like you’re earning his trust, in a sense, instead of the other way around. A necessary reminder that everyone is fighting a battle we know nothing about. 9.5/10 ⭐️

Watch It.

Speaking of a good book – this show feels like one. I was telling Jon as we started watching that it very much feels like someone is reading me a story instead of acting in a series. Perhaps because Kate Winslet is so remarkable in it. Mare of Easttown is a mixture of a delicious whodunit/ drama/ murder mystery, where you’re very much rooting for the main character, and all of the townspeople in general, despite their flaws. Warning: you’re going to start getting really into it in the middle of the second episode, only to find out that the fourth is the last (darn you, Covid). I can’t wait until it starts back up again – it was just getting juicy. Click the link above to watch the first episode for free!

I have been desperately wanting to get more into meditation. I believe I do it on some level. An example: before I open my eyes in the morning, I express gratitude for the gift of another day, then I sit with it a moment. In the silence. I wait until I feel at peace and the joy starts bubbling. I don’t allow any worries for the day. If those start, I choose another thought, then I make sure I add a smile to really set it off on the right foot, and hop out of bed. But is it meditation in the traditional sense? No. So I started listening to this podcast when I’m getting ready in the morning. Again, I’m not doing it “right” per se. I’m not cross-legged and eyes closed, focused solely on that. However, it’s a start, and I know that it helps put me in a great state to get the day moving! I thought you might like this too, however you implement it!

    Your personal behavior consultant likes the article but thinks that the best pet for someone with anxiety is the one that gives you joy. Cat, dog, bird, horse, goat…its all about not adding more stress or anxiety to your life and only adding love. Having something to care about more than your own worries. Just my own humble opinion ?
