Sunday Scrolls: March 28th

Welcome home! We’re so glad you’re here to Scroll with us. Today is the best mix of whipping up Easter treats, deep conversations, fun finds to lighten it up, and inspiration for a joyful week ahead! PS – the listen to it segment is always a good one, but rarely the *highlight* for me, because there are always so many gems competing with it below. But today, I have to say, it’s pretty darn good and a front-runner favorite:

Make It.

I can’t tell you how excited I am for this one! These are a big favorite with the entire Pack, and are so simple to make. Bonus: these Reese’s Peanut Butter Egg dupes are vegan, gluten-free, and don’t have any of the additives you’ll find in the real thing. Even if you could care less about vegan/ g-f, I have a feeling you’ll appreciate the taste more than you’re expecting to. This only makes 4-6 eggs so double the recipe if you’re hoping to keep them in the freezer for when your sweet tooth strikes. They’re delicious!

  • Batter Up! Mix together 2/3 cup of peanut butter (sunflower butter is what we used, but you could do any nut butter!), 1 T. maple syrup (or agave nectar) and 1 T. of coconut flour. You can play with the coconut flour if it feels too runny – it should be sticky like cookie dough.
  • Shape the eggs. Scoop & shape into eggs, then flatten the tops. Place each egg on a baking sheet lined with parchment paper and put in the freezer for an hour.
  • Chocolate bath. Just before you take them out of the freezer, melt 4 oz. chocolate on very low heat, stirring frequently. Transfer your melty chocolate to a new bowl and let it rest for a minute or two, then give those eggs a dip!
  • Freeze again. Place the dipped eggs back on the parchment, sprinkle with sea salt, then head back to the freezer for an hour (or as long as you can stand to wait), we didn’t make it that long ?.

When we moved to Texas, everyone said, you must go to Buc-ees. But when I googled it and saw it was a gigantic gas station, I thought, what?! THIS is why you have to go to Bucees, and why Grey insists we make a monthly trip (it’s only 10 minutes away, but you can see that it’s a lot). The roasted nuts alone are worth it, I crave them daily ?. They also have unexpected (and beautiful!) home finds, we bought the softest pajamas for Grey, and now own Buc-ees onesies like you see below. You really do have to go!

Read It.

This was not my favorite book I’ve read of late. And I’ve promised before that I wouldn’t include books I didn’t genuinely love. I’m not reneging! I am sharing because, though it wasn’t written as I’d hoped/ expected, I took a big nugget away from After that has helped me greatly with working on healing some past wounds, and setting myself up to be more mindful as I move forward in my life. I was hoping for more of a storytelling vibe, and there were certainly elements of that, but it had a big clinical component as well. (Which makes perfect sense given that it’s written by a doctor, who is proving these near-death experiences from a scientific point of view.)

In any event – this was incredibly moving in two ways for me: 1) reading about people’s sudden life and death experiences puts right in your face how fragile life really is; and 2) more than half of the people who had these near-death experiences, reported seeing a full movie of their life events. Big and small, lessons they learned, how they wronged people and how they themselves were wronged. THAT is what shook me. We can’t change the past, but we sure can change our actions in the future. How we treat people, how we speak to them, and the joy we infuse in everything and everyone around us. 8.5/10 ⭐️

I’ve always been a fan of Post Malone, and knowing that, Jon sent me this ?? link just after 5am this week ?. Grey was still asleep and we jammed out with our coffee. Best way to start the day! Warning: if there are littles around, there is a cuss word or two. But his voice ?, truly the best it has ever sounded! Here’s hoping Post puts out a country album!!

A follow up to last week when I mentioned this show that I am hands-down obsessed with. We’re in Season 3 now and I love it even more, so if you weren’t yet convinced, it gets better. This character is truly incredible, and they have schooled and inspired me in a multitude of ways ?.

I bookmarked this page for vegan Easter dinner recipes for me & Grey. The vegan meatloaf looks scrumptious! (We’re ordering Texas BBQ for Jon and his parents ?).

Things to do on your lunch break to make your whole day better. I am all about #’s 5 & 8. When is the last time you just sat and ate? No multitasking. No phone scrolling. Just eating.

Have you seen this new bath trend? I haven’t taken a bath since I was pregnant for Grey, but I know friends who swear by them. I can see the benefits of this one, though!
