Sunday Scrolls: March 26th

The Scrolls at the bottom this week are too good to zoom through. Like a major perspective-shifter on ambition, a new anti-aging study we can all benefit from, the best book I have ever read (not hyperbole!), and the usual movement, meal (best cookie!), and motivation inspo. Meals

These cookies knocked my socks off and were a fast favorite in our house…gobbled up so quickly, I have dreamed of them since, and will be baking another batch this afternoon πŸ˜…. Which Girl Scout cookies are your favorite? Now you know mine πŸ‘‡πŸ½πŸ˜:

Vegan + GF Samoas

COOKIE BASE

  • 1 cup homemade oat flour
  • 1/4 cup arrowroot starch
  • 2 T. maple syrup
  • 2 T. coconut oil melted
  • 1 t. vanilla
  • 1 t. cinnamon
  • 1/2 t. salt

CARAMEL

  • 3/4 cup shredded coconut
  • 1/2 cup vegan milk
  • 1/3 cup coconut sugar
  • 2 t. coconut oil
  • 1 t. vanilla
  • 1/2 t. salt

CHOCOLATE DRIZZLE

  • 3/4 cup vegan chips
  • 1 t. coconut oil

Start by mixing the cookie base and pop the dough in the fridge while you toast the coconut. Place the shredded coconut in the oven at 325 for just a few minutes until it is lightly brown. Take it out, then bump the heat up to 350. Scoop the dough into doughnut tins and bake for 10 minutes.

While you’re baking the cookies, whisk all ingredients for caramel for 15min – then let booth cool. After cooling, mix coconut into caramel and layer on top of cookies. Pop in the fridge to set while you melt your chocolate drizzle. Go for the gold by dipping the bottoms of the cooled cookies into the chocolate, then drizzling more on top.

They are next level delicious and vegan, gluten free, and I can’t wait to hear what you think of them!

Movement

Do you have a set of resistance bands? We have them in our workout cabinet, but I have to admit, I haven’t pulled them out in ages. I reach for the weights or kettlebell instead, and my goal this week is to get more comfortable using the bands. I have heard so many incredible success stories in terms of mobility and strengthening muscles without the strain of heavy weights. I also love the idea of packing these in the car for our next vacation instead of bulky dumbbells that take up a ton of room. This workout is great for beginners πŸ‘‡πŸ½. And I couldn’t wait to share this one with you: THE BEST BOOK I HAVE EVER READ. I read about 3 books a week, but this one took me a bit to finish. I savored it so deeply, that despite wanting to devour it whole, I dog-eared at the end of every chapter, saving the next one for the next day. I didn’t want it to end. If I had to attribute the accolades to one component, it’s the depth of the details. Also, the humanity of it. Perfectly imperfect, deeply thoughtful, the cadence and writing are astounding. I can’t let go of it. 10/10 ⭐️
