Meals
I have a bit of a cookbook obsession, and Jon brought home a Cook’s Science cookbook from the bargain bin at the grocery store. The only problem with my love of cookbooks, is that I can very rarely follow a recipe as-is because of all of our dietary restrictions. So the joy of it is in the ideas, and then I modify to make the recipe vegan, gluten-free, and most importantly, as clean as possible. Enter, the honey cake.
And because we can’t just eat cake, a bit of health from the genius Dr. Hyman. I am making this to go on top of our gf focaccia tonight!
Asparagus Walnut Pesto via Dr. Mark Hyman
- 1 pound asparagus, woody ends trimmed
- 2 garlic cloves
- ¼ cup raw walnuts
- ⅓ cup nutritional yeast
- ¼ teaspoon freshly ground black pepper
- 1 lemon, juiced
- ¼ cup olive oil
- 1 large shallot, thinly sliced
- 1 tablespoon apple cider vinegar

I’ve been on a deep dive of late into the Blue Space Effect. Studies show that exposure to bodies of water (oceans, lakes, rivers, even ponds) can enhance creativity, reduce stress, and boost overall JOY. Who doesn’t want that?
