Sunday Scrolls: February 19th

Grey woke up at 4am asking, “What day is Bob Barker turning 100? We have to do something for him!”. And that’s the kind of energy that keeps us on our toes 😅. We have until December 12th to figure out how we’ll celebrate Bob, by the way. So for today, let’s celebrate a glorious Sunday with a scrumptious new chocolate pudding recipe, a new workout motivator, and the most fun, fabulous finds of the week!

Meals

I made this for my valentines, and I couldn’t wait to share with you! I have actually been testing and tweaking it for a couple of weeks and finally landed on the best version. Do not let the first ingredient deter you – that’s why I kept tweaking, so you wouldn’t taste it. You have my word!

CHOCOLATE TOFU PUDDING
  • 1 package of organic tofu
  • 1 t. cinnamon
  • 1 t. vanilla
  • 1/4 cup maple syrup
  • 1/4 cup coconut milk (or vegan milk of choice)
  • 1/3 cup cocoa powder

Add all ingredients to your food processor and go to town for about 2 minutes. You want it extra silky. Pour in ramekins, and top with your melted chocolate of choice. I went with cinnamon lily’s chips (melted with a half teaspoon of coconut oil) and then popped it into the freezer to harden. The result is a hard chocolate shell that you crack open to reveal luscious chocolate pudding! A delight!

I like tofu on occasion because it is a fantastic complete plant protein, is rich in antioxidants, calcium, is great for blood sugar management, and an anti-inflammatory!

Movement

I know this is not a new notion, but it keeps coming up for me when schedules get “too busy” for a workout, or I feel like I’ll never get there. ((Wherever “there” is)). But this proves true again and again – there is always one step we can take to move us ahead when we’re feeling too overwhelmed by the challenge. What’s the next first step you can take?
