Sunday Scrolls: February 13th

I know you won’t be surprised that I know absolutely zilch about the big game tonight – but I am deeply looking forward to Jon’s famous pizza, and Grey’s face when he realizes they’re heart-shaped. This age is so fun seeing their excitement for holidays, and the joy in the little things. Today’s Scrolls is all about that with the easiest (and most delicious) air fryer banana bread, a laundry list of our favorite finds of the week, and some nuggets of wisdom I feel so thankful to have borrowed from the experts, and pass on to you! Making.

Did you know bananas are the tastiest and even more healthy when they’re covered in brown spots? That’s when they have the highest level of antioxidants! Today we’re making our beloved banana bread – in the air fryer – and it is all sorts of crunchy on the outside, soft and scrumptious on the inside. It’s EASY, too. Here’s how:

  • 4 bananas mashed
  • 1 T. good vanilla (Mexican vanilla is a game-changer!)
  • 1 cup GF oats (we like Bob’s Red Mill organic)
  • 1/2 cup GF flour of choice (this time I used almond, but it has worked with others as well. Have you ever tried amaranth? Delicious!)
  • 1/2 t. baking soda
  • 1/2 t. salt and 1 t. cinnamon (I always go heavy on the cinnamon so add a little more if you’re like me and love it!)
  • A (generous) handful of HU vegan chocolate chips
  • handful of chopped walnuts
  • 350 degrees for 12-15 minutes! We have a tiny air fryer so the above ingredients made two batches for us. FYI – Be sure to eat same-day for optimal deliciousness. This isn’t one that keeps that incredible crunchiness for longer.

Watching.

I remember when this show first came out and I couldn’t wait to watch it! I have the most magical memories from my time on morning television and miss it all the time. Anyone here remember Bridge Street? In any event, I wasn’t splurging for Apple TV so it wasn’t in the cards until now πŸ˜†. We’re only three episodes in, but I have to say, for such mega stars, I’m a bit underwhelmed. I’m giving it one more try just in case it’s the kind of series that takes a while to get into. For me, Game of Thrones was like that. Schitt’s Creek, too, come to think of it. Not that they’re similar in any way πŸ˜…. If you’re a fan (or not), I’d love to hear what you think in the comments and if we should push through until it gets better!

Reading.

Every so often, you need a quick beach read (especially in the dead of winter) like Reckless Girls. This was not the best writing in terms of brain expansion, but it is a fabulous form of escapism and not too scary that you can’t fall asleep at night.Β It’s a whodunnit you don’t see coming, and no major triggers to warn you about. An easy 7.8 ⭐️

Listening.

I enjoyed five podcasts this week over many dog walks with Gemma trying to run out that puppy energy πŸ˜…, but none were quite as impactful for me as this one. I have struggled with a sugar addiction for so long (why does it have to taste so good?!), and have been making more of an effort in the past year to go refined sugar-free which has been both difficult, and rewarding. I completed the Nutrition and Healthy Living program at Cornell last year, and learning about the gravity of the impact sugar has on our cells, specifically breeding cancerous cells, was shocking to me. I wouldn’t call this lesson a “downer” but if you have even waffled with altering your diet for your well-being (and the well-being of future you in 5 years) this is well worth a listen πŸ‘‡πŸ½.

Feeling.

Trying.

When you feel like you have nothing to wear, a white button down and jeans always does the trick. I’ve worn this one at least weekly for 5 years and just had to reorder from excess wear πŸ˜†.

What one food would you bring to a desert island if you’d be stuck there for a year? Mine would be chickpeas. I have a mild obsession with them and love using them for both savory, and sweet dishes! Can’t wait to try this recipe!

Grey’s best friend just surprised him with the sweetest Valentine’s care package and she included this incredible book we can’t stop reading. What a wonderful message – and the most thoughtful friend πŸ˜­πŸ™πŸΌ.
