Sunday Scrolls: April 11th

I feel so thankful for this week. Do you ever notice how the same lessons keep popping up until you learn from them? I felt that experience in a big way recently. It’s almost like a video game where when you finally get the wisdom you need, you move up a level. I hope we all get to feel that insight, joy, and relief in the week to come. Today, we’re sharing our go-to breakfast, a juicy beach read, breathtaking gem in the listen to it category, and favorite links for you to check out at the end!

Make It.

There are a million ways to make avocado toast. And I know that fact first-hand because I’ve tried so. many. variations. You may have already rolled your eyes at the first sentence, but please!, hear me out. Jon and I usually eat breakfast around 11am each day. We’re not super strict about it, and when we’re hungry earlier, we eat. I’ve found that the first meal I eat needs to be a great balance of fat & fiber to help with my digestion & energy. THIS is it. She’s the perfect blend of nutrients, scrumptiousness, fresh ingredients, and the crunch to leave you feeling satiated.

Packed Avocado Toast
  • Avocado – slice and set aside, then squeeze lemon juice on top, plus a little salt and pepper. Let it sit while you toast your bread.
  • Any bread you like! We use a gluten-free Ezekiel bread you can find in the freezer section, but have also tried (and loved) it on sourdough.
  • Smash – Once your bread is toasted, smash your avocado on top and be sure to get it right to the edges.
  • Greens – Top with your greens of choice: we rotate between a spring mix & arugula. Arugula wins hands down if you enjoy a little jolt in your mouth!
  • EVOO – Drizzle a little extra virgin olive oil over the greens, then add your spices! We shake everything but the bagel seasoning, red pepper flakes, and garlic powder.

With all of the sunshine we’ve had this week, I was in the mood for a beach read. I kept seeing this one pop up, and she hit the spot. The writing wasn’t fantastic (sometimes borderline not-believable), but it felt like a fresh storyline, and ended better than expected. 8/10 ⭐️

Watch It.

Jon had this on and I wasn’t expecting to like it as much as I did. It was so funny to reminisce about what it was like renting movies when we were younger and hearing Jon’s stories about waiting at the counter to see which ones people were returning because he couldn’t leave without getting his favorite. The history behind it and the insider look at the culture during peak Blockbuster time was so interesting. Isn’t it crazy to think our kids will never know about renting movies in this way? I don’t think Grey would even know what a VHS or dvd looks like – we don’t own any! PS – do you remember being scared of the back room at movie rental stores – the one with the beads? ???‍♀️.

Listen to It.

My mother-in-law sent this to me earlier in the week and I’ve listened to it 437 times since. Talk about extraordinary, magnificent, magical talent. Listening to it is so powerful, but watching the exchanges and the feeling between the two of them is even better ???.
