Pumpkin Spice Protein Muffins (easy, vegan + gf)

I love an easy grab & bite snack that doesn’t spike our blood sugar, is packed with good-for-us ingredients and tastes like a treat! In the spirit of pumpkin spice season, let’s kick it off with absolutely scrumptious pumpkin protein muffins we can enjoy for breakfast, afternoon delight, or dessert!

pumpkin spice protein muffins – one bowl – vegan + gluten free

  • 2 beautifully brown bananas
  • 1 can pumpkin puree
  • 1/2 cup coconut milk (or vegan milk of choice)
  • 1 t. vanilla
  • 2 T. coconut sugar
  • 3 scoops Truvani pumpkin spice vegan protein powder
  • 1 cup gluten free flour
  • 1 t. salt
  • 1 t. baking soda
  • 1 t. baking powder
  • 1 cup HU chocolate gems or favorite vegan chocolate chips
  1. Whisk together wet ingredients.
  2. Sift in dry ingredients on top.
  3. Lightly incorporate together and at the end, toss in chocolate chips.
  4. Scoop into greased muffin tin.
  5. Bake at 400 degrees for 22 minutes (or until the edges starts to crisp on top and your fork comes out clean).
