I love an easy grab & bite snack that doesn’t spike our blood sugar, is packed with good-for-us ingredients and tastes like a treat! In the spirit of pumpkin spice season, let’s kick it off with absolutely scrumptious pumpkin protein muffins we can enjoy for breakfast, afternoon delight, or dessert!
pumpkin spice protein muffins – one bowl – vegan + gluten free
- 2 beautifully brown bananas
- 1 can pumpkin puree
- 1/2 cup coconut milk (or vegan milk of choice)
- 1 t. vanilla
- 2 T. coconut sugar
- 3 scoops Truvani pumpkin spice vegan protein powder
- 1 cup gluten free flour
- 1 t. salt
- 1 t. baking soda
- 1 t. baking powder
- 1 cup HU chocolate gems or favorite vegan chocolate chips
- Whisk together wet ingredients.
- Sift in dry ingredients on top.
- Lightly incorporate together and at the end, toss in chocolate chips.
- Scoop into greased muffin tin.
- Bake at 400 degrees for 22 minutes (or until the edges starts to crisp on top and your fork comes out clean).
