You might have seen these before, but if you haven’t tried them yet – I implore you to. Yes, they merit that strong of a word choice 😅. If you are trying to be mindful of your sugar intake, but are craving something sweet; these date delights hit the mark every single time. Grey calls them candy bars, they’re Jon’s go-to after dinner dessert, and I love them as a midday pick-me-up. They’re packed with fiber, protein, and that sweet and salty combo we all love. Plus, they take less than ten minutes to whip up and you can store them in the freezer for when the sweet tooth strikes:
HEALTHY SNICKERS RECIPE (gluten-free, vegan, refined sugar free)
- 12 fresh dates, pitted (find them outside of the cold section at Costco)
- nut or seed butter of choice (we’ve tried organic peanut butter and almond butter with success)
- marcona almonds (regular will do just fine but marconas give it a salty crunch)
- your favorite chocolate chips (we like Hu and Lily’s) melted with 1 t. coconut oil
- optional walnuts and sprinkle of sea salt on top
Once you pit your dates, lightly spoon enough peanut butter to coat the inside of the date, but not so much it is overflowing. Add 1-2 almonds and press down inside. You can use any kind of nut you prefer.
Mix chocolate with 1 teaspoon of coconut oil and melt for about 30 seconds. Gently dunk your dates in the melted chocolate and top with walnuts and a sprinkle of sea salt. Pecans or peanuts would be great here too!
Store in the freezer until you’re ready to enjoy them!
