I debated whether or not to tell you this before you fully committed to clicking the ‘read more’ button, but here goes: this smoothie is completely made from vegetables. There, I said it! And I told the truth right off the bat because it is absolutely scrumptious and tastes like a treat and I feel so confident that it is equal parts delicious + nutritious that I know you’re going to love it. Read on for the recipe, and all of the ways it boosts your health and your body:
INGREDIENTS
- 1 lb. frozen riced cauliflower
- 2 carrots, skin peeled and rough chopped
- 1 small, fresh zucchini, rough chopped
- 1 t. vanilla
- 1 T. maple syrup
- 1 t. cinnamon
- 2 scoops vanilla protein powder (we use Truvani – clean, organic, and vegan!)
- 2 cups favorite vegan milk (I used Three Trees, but coconut milk would be amazing in this!)
