Buckwheat Banana Bread – V, GF

Don’t let the name turn you off: buckwheat is about as beneficial as they come. This superfood flour alternative may improve heart health, promote weight loss, and help manage diabetes. It’s also a good source of protein, fiber, and energy! Oh, and gluten-intolerant friends, rejoice. Despite its name, buckwheat is not related to wheat and is gluten-free. All that and we haven’t even gotten to the bananas yet! This one bowl wonder of a banana bread is nutritious, delicious, and super easy to whip up:

BUCKWHEAT BANANA BREAD

  • 5 bananas, mashed
  • 1/3 cup olive oil
  • 4 oz. no sugar added applesauce (8 T.)
  • 1/4 cup vegan milk
  • 1 teaspoon vanilla
  • 1 teaspoon apple cider vinegar
  • 1 cup organic coconut sugar
  • 2 cups organic buckwheat flour
  • 1/2 t. salt
  • 1/2 t. cinnamon
  • 3/4 t. baking soda

WHIP UP THE ONE BOWL WONDER:

  1. Preheat your oven to 350 degrees and spray your bread pan.
  2. Add all of your wet ingredients to a large mixing bowl and whisk them together.
  3. Then add your dry ingredients right on top of the wet, and slowly mix in using a spatula.
  4. Once you have that incorporated, add in as many chocolate chips as you like. We used Lily’s no sugar added chocolate cinnamon chips and they were chef’s kiss perfection!
  5. Pour into your bread pan (here is the one I used), and bake at 350 for 50 minutes. Let cool and ENJOY!
