Sunday Scrolls: February 20th

I deleted instagram this week. It had been a long time coming since I hadn’t posted for a couple of months, and I felt like a “break” wasn’t cutting it. I have been taking stock of so much in my life with this in mind: where your attention goes, energy flows. How much time am I taking away from something else? What value is it adding to my life? What value am I adding for others? If you’re feeling a need to protect your peace, your energy, or set boundaries to who has access to you – follow the nudge to do it, in any way that makes sense for you šŸ’™. And, as always, thank you for making this a warm, safe place to gather together – one we look forward to visiting, and sharing with you, more than you know!

Making.

This cake was supposed to be a test recipe, so I didn’t film a how-to like I usually do – and then it was gobbled up so quickly that I didn’t snap a proper picture. But this little cutie was a fan, and they had no clue it was vegan, gluten-free, and refined sugar free. Woo!! I’ll count it as a win that Jon promptly asked when I’d be shooting the video for it because he couldn’t wait to have it again. If you’re craving cake – this one is next-level, mouthwateringly good šŸ¤©, and healthy!

Apple Carrot Cake with Cashew Cream Frosting – V | GF | RSF
FOR THE CAKE (mix in 1 bowl):
  • 1/4 c. olive oil
  • 1 cup of your dairy-free milk of choice (I used oat milk)
  • 1 T. apple cider vinegar
  • 1 T. vanilla (you know how I feel about Mexican vanilla šŸ˜†)
  • 1/2 cup pure maple syrup
  • 8 oz. sugar free applesauce (the kid packs work great!)
  • 1 t. cinnamon, 1/2 t. ginger, a few shakes of sea salt
  • 2 t. baking powder, 1/4 t. baking soda
  • 2 apples + 1 carrot, shredded
  • 1 over the top cup of oat flour (I made my own by quickly grinding Bob’s GF organic oats in the food processor)
  • 1 cup of ground walnuts + almonds
  • BAKE AT 350 for 25 minutes
FOR THE FROSTING (blend together):
  • 1 cup of soaked cashews (you can soak them in the fridge for a few hours, or quickly soak them with boiling water for 1 hour) – drain, rinse, and blend with:
  • 1/4 cup maple syrup or date syrup
  • 4 pitted dates
  • 1 t. cinnamon
  • vegan milk to your preferred consistency. I started with 1 T. and added a little extra

Watching.

Did you follow this story when it was in the news? I had seen her name pop up in an article or two, but knew nothing about the details. It feels like the best kind of juicy novel you can’t put down. Heads up to fellow Ozark fans – it might take you a minute to picture Julia Garner as anyone but Ruth, but it’s worth pushing through despite the accent. I love the way the writers have woven together several different perspectives and versions of events – we’re halfway through and can’t wait to see how they unravel it for us.

Reading.

Signs will open your eyes to a whole new world; one you may have seen glimpses of already, but very much peels back the layers of the onion so that you can’t help but tear up a little (or a lot in my case šŸ˜…). I so enjoyed reading through all of the incredibly moving experiences Laura Lynne shares, along with her expert advice on how to harness the power of signs in our own lives. Yes, it’s on the woo woo side, but that, coupled with science, spirituality, and beautiful human stories makes it a 9.2/10 ā­ļø. PS – if you have a recurring sign that pops up for you, I’d love to hear about it in the comments! Mine are owls and butterflies šŸ™šŸ¼.

I have been working on a post for you on creative ways to add steps and movement to our days – even the bitter cold ones, and especially the days you just plain don’t feel like it. My best pal Holly sent this podcast over to me and I was immediately hooked. There is so much wisdom in this conversation in regards to commitment, walking as a way to process pain and emotions, even fantastic parenting nuggets peppered in. I know you will find something you can relate to, it was a treasure trove of gems!
